What does the star level actually mean at the table?
The MICHELIN Guide uses three levels, and its own definitions are precise. One star: high quality cooking, worth a stop. Two stars: excellent cooking, worth a detour. Three stars: exceptional cuisine, worth a special journey.
Inspectors assess five criteria: quality of ingredients, mastery of cooking techniques, harmony of flavours, the personality of the chef expressed through the cuisine, and consistency across multiple visits. That last criterion is significant. MICHELIN does not reward one exceptional service. It recognises what a kitchen can sustain.
Critically, stars assess the cooking and nothing else. Decor, room size, table spacing and service style are evaluated separately using a different symbol. Wana Yook (1 star) reimagines khao kaeng as fine dining in a 100-year-old colonial house on Phaya Thai Road.
European fine dining
Sühring (3 stars) is German fine dining at its highest level in Asia. Côte by Mauro Colagreco (2 stars) and Anne-Sophie Pic at Le Normandie (2 stars) represent French and Mediterranean cuisine respectively, both in major hotel settings. Elements, Inspired by Ciel Bleu (1 star) at The Okura Prestige on Wireless Road, works with French technique and Japanese influences.
Between Asia and Europe: Mia

Adding a beverage pairing
A wine pairing typically adds THB 1,500++ to THB 2,500++ per person at the one-star level; THB 2,500++ to THB 4,500++ at two stars. A non-alcoholic pairing, where offered, runs at a similar range.
