Our philosophy does not end at the kitchen door.

We believe that a dining experience is not one gesture but many. What arrives on your plate. What fills your glass. What pours from the vessel held in your hand.

Each element carries the same weight. Each one receives the same care.

The Mia Wine Initiative began from this simple conviction — that a beverage programme, built with honesty and collective intention, can move a diner as much as the cuisine itself.

A wine programme built on two principles. Conviction. And voice.

Some choices are collective — every pairing on our list is voted in unanimously by our senior team. Others are personal — each member of our team contributes their own favourite bottles, marked throughout the list by the butterfly. Two ways of choosing. One shared standard.

How it works.

The pairings.

Every pairing on our list earns its place through one principle.  Consensus.

A member of the senior team — our sommelier Shane Pangan, our chefs, or senior management — proposes a pairing. The bottle is opened. Tasted. Discussed. Challenged. And then voted on unanimously. Only then does it enter the programme. Nothing else makes the cut.

It is a slow process. A demanding one. But it is the most accurate reflection of what we believe a great pairing should be — built not by authority, but by shared conviction.

The favourites.

The wine list itself tells a different story. Each member of our team is invited to champion the bottles they believe in — the ones they would pour for a friend, defend over dinner, return to again and again. Their personal selections are marked throughout the list by the butterfly.

These are not curated by committee. They are introduced by the people who know them best, and stand or fall on their own merit.

This is the philosophy we carry into every service. Empowerment. Professional growth. A shared sense of ownership. We are deeply proud to see our team embrace this responsibility with passion, and with care.

At the heart of our wine list lies a simple, stubborn belief — that wine should be a source of enjoyment, of sharing, of discovery. Not of intimidation.

We celebrate the diversity of styles, regions and producers. From the timeless Old World to the innovative New World. From iconic houses who have shaped the history of winemaking, to emerging vintners pushing the craft in new directions. From bold structured reds to delicate aromatic whites.

No style holds more authority than another. No region carries more weight than another. The list is curated to invite exploration — never to dictate taste.
